Is it possible and if so; To keep an approach email, where can I accept / reject a SharePoint workflow from within an email instead of navigating to SharePoint?

Or is it possible to use InfoPath for approval / sharepoint site rather than in Outlook?

Yes, but only with Outlook 2007+ There is a "Edit this task" button, which you can use to directly accept or reject work from Outlook.
